Satruday was a great day because I watched Tyler Florence cook this amazing meal that I have been thinking about ever since. Actually I have been thinking about this sandwich and I totally am going to make it. It is a Mozzarella Grilled Cheese with home made pesto on sourdough bread. Yikes this looks so good. I am going to try to make this sandwich before weeks end. He also made a pretty cool chicken noodle soup but since I love cheese I am stoked about this one. Basil pesto: To make pesto:
4 slices thick-cut sourdough bread
1 ball (1 pound) fresh mozzarella, cut into 1/4-inch slices
2 plum tomatoes, cut into thick slices
1 cup fresh basil pesto, recipe follows
Kosher salt and freshly ground black pepper
Extra-virgin olive oil
1/2 cup pine nuts
2 cups fresh basil leaves
1 cup fresh Italian parsley leaves
1/2 cup Parmesan or Romano
2 garlic cloves
1/4 teaspoon salt
1/2 cup extra-virgin olive oil

best grilled cheese ever was in Wisconsin @ fresh bacon, 3 cheeses & tomato.
